This two-day course provides a structured and practical understanding of FSSC 22000, aligned with SANS 22000:2019 (ISO 22000:2018). Day 1 focuses on the core food safety management system requirements, guiding participants through Clauses 4 to 10, including organisational context, leadership, planning, support, operations, performance evaluation, and continual improvement. Practical exercises and a take-home quiz are included to reinforce understanding and application of the standard.


Day 2 builds on this foundation by introducing the prerequisite programme requirements through ISO/TS 22002-1:2025, along with the specific FSSC 22000 Version 6 scheme requirements. Participants will explore additional and new requirements, gaining clarity on how these integrate with the ISO framework and impact implementation.

The course also highlights key changes introduced in FSSC 22000 Version 7, including transition timelines and implementation considerations. Through practical exercises, participants will develop the competence to interpret, implement, and maintain an effective and compliant food safety management system within their organisation.

By the end of the session, participants will be able to:


  • Explain the structure, purpose, and key components of FSSC 22000 and its alignment with SANS 22000:2019 (ISO 22000:2018).
  • Interpret and apply the requirements of Clauses 4–10 within a food safety management system, including context, leadership, planning, support, operation, performance evaluation, and improvement.
  • Demonstrate understanding of prerequisite programmes based on ISO/TS 22002-1 and their role in supporting food safety controls.
  • Differentiate and implement FSSC 22000 Version 6 scheme requirements, including additional and new requirements (Clauses 2.5.1–2.5.18).
  • Assess and integrate risk-based thinking and operational controls into food safety processes through practical application exercises.
  • Identify and evaluate key changes in FSSC 22000 Version 7, including transition timelines and implementation implications for organisations.
